Spinach and Feta Stuffed Salmon

INGREDIENTS
- 1-2 pounds of wild Alaskan Salmon
- 1 package of frozen spinach, defrosted and drained
- 6 oz feta cheese
- ¼ C toasted pine nuts (optional)
- Spices: Basil, garlic powder
INSTRUCTIONS
1. Without cutting all the way through, cut a diagonal pocket in the fish from one top side of the fish down to the opposite side of the fish, leaving about ½ inch. This pocket is where you will place your stuffing.
2. Squeeze all the water out of the spinach.
3. Place in a bowl with the feta, toasted pine nuts and spices.
4. With your hands, combine all the ingredients.
5. Pack the filling together and place in the pocket in the fish
6. Bake at 350 for about 15 minutes or until the fish flakes easily
Serve with cooked brown rice and Steamed Kale with lemon.
