Pasta with Dried Tomatoes and Feta Cheese
        
INGREDIENTS
1 pound, 4 oz. brown rice pasta
2 cups dried tomatoes
1/2 C extra virgin olive oil
1 1/2 Tablespoons fresh garlic, chopped
1/2 C chopped fresh basil
1/2 teaspoon salt
1 teaspoon black pepper
12 oz feta cheese, crumbled
1 C pitted, whole black olives    
  

INSTRUCTIONS
In a large pot, cook the pasta in boiling water until tender, but still firm.  While pasta is cooking, soak the tomatoes in a small bowl with boiling water (about 15 minutes, or until soft.)  Slice soft tomatoes.

In a medium size skillet, heat 1 T of the oil and sauté the garlic 2 minutes.  Turn off the heat, and add the rest of the oil, tomatoes, basil, salt and pepper.

Drain and rinse cooked pasta and place in a serving bowl.  Toss with remaining ingredients, and serve immediately.
