Festivus Beans and Rice
INGREDIENTS:
3 Tablespoons of olive oil 2 Cups of cooked rice 1/2 Cup onion, diced 2 Cups of black beans
8 oz. mushrooms, sliced 1 1/2 teaspoon of ground cumin
1-2 cloves of Garlic, minced
1/4 cup diced red or yellow bell pepper 1 teaspoon of cayenne
1 Tablespoon of fresh, minced cilantro
1/2 Cup fresh or frozen corn
1 pinch of ground cloves
salt, pepper and garlic powder to taste
INSTRUCTIONS:
Heat oil in a large wok or saucepan. Saute garlic, onions, mushrooms, bell pepper, corn over medium heat for 5-7 minutes or until everything is tender. Set aside the cilantro (if fresh) and add the rest of the ingredients to the wok. Saute five minutes, or until everything is well heated. Remove from heat and add fresh cilantro.
